Ingredients: Pea green is one of the most protein-rich vegetables. The contained protein contains all eight essential amino acids. Vitamins A, B1, B2, B6, and C make peas as valuable as their content with minerals: calcium, phosphorus, magnesium, copper, manganese, zinc, iron, silicon, potassium, sulfur, and sodium.
Usage Tips: raw: in salads, on bread, for juicing or as a decoration of your dishes; steamed: prepare similar to sugar peas.
Health Benefits: base-forming, digestive-promoting, stimulating metabolism. One cup of pea shoots provides about 35% of the daily value of vitamin C and 15% of the daily value of vitamin A. In comparison, this is seven times as much vitamin C as blueberries and four times as much vitamin A as tomatoes. They are also an excellent source of vitamin K, providing 66% of the daily value from a one-cup serving.
